After Amy spent the day continuing to prune up the skirts of the trees~ she called me on the phone, "Laurie I just found the first two red olives on a tree, You know what this means!" What she is exclaiming is that as the season progresses the olives mature on the trees; when the cool mornings arrive in the fall, the olives will begin to change color~green, to lime green to red to purple to black. We like to have a mixture of colors on the trees before we harvest. It's an exciting time for us to see the color change begin. We nurture the trees all year long, watching as they produce fruit then we harvest at our particular time and wonderful extra virgin olive oil is made. Sounds simple right, yes and no, you can follow along with us through pictures.
